
The thing you have to eat in Segovia is the cochinillo, or roast suckling pig, and I read that the best place to do it is Restaurante José María. The pig is presented in the center of the room, and then one of the servers starts WHACKING IT WITH THE EDGE OF A PLATE. The idea being that it’s so tender you don’t even need a knife to cut it. It’s a crapshoot what piece you’ll end up with, and my fiancé hilariously got a whole leg. If you love crispy skin, this place is a total treat.
